I love cooking from scratch, looking in my pantry and planning and writing my meal plans!

So this is one of my recipes which I create in such moments! A delicious mashed potatoes cake with spinach and feta filling!

This is really a very easy and delicious recipe, which is a warming and hearty weeknight dinner!

If you want you can use leftover mashed potatoes! I have added delicious spinach and feta cheese between two layers of mashed potatoes.

I think this dish is perfect for picky eaters too. Junior loves this dish and it’s just something different as always only spinach and potatoes 😉

Here is the easy recipe!

Mashed potatoes cake with spinach and feta filling

Ingredients:

  • 1 kg of potatoes
  • 1 egg
  • 450 g chopped spinach frozen
  • 3 cloves of garlic, chopped
  • 1 scallion, diced
  • 1 cup of cream cheese
  • 6 tbsp milk
  • some oil
  • 100 g butter
  • Salt and pepper
  • 200 g Feta
  • 2 tbsp Parmesan

Directions:

  1. Peel and dice the potatoes. Boil in enough salt water.
  2. In a pan add some oil and let the scallion and garlic roast a little. Add the spinach and salt slightly. Close with a lid and let simmer for about 5 minutes.
  3. Then add 3 tbsp. of milk and stir well. Add the fresh cheese and slowly melt and stir in the spinach. Simmer for about 10 minutes.
  4. Put aside and let cool down.
  5. Pour the potatoes and put them back in the pot.
  6. Add the butter, salt and pepper and add the remaining milk. Mash the potatoes coarsely.
  7. Finally, mix the egg and the grated Parmesan in the mixture.
  8. Grease an ovenproof dish lightly and spread half of the mashed potatoes into the baking dish.
  9. Then spread the cooled spinach mass. Sprinkle some feta over it. Cover with the remaining mashed potatoes and crumble the rest of the feta over it.
  10. Bake at 200 ° for about 20 minutes.

    Am Samstag kommt mein Bruder mit Schwägerin zu Besuch.
    Wir werden gemeinsam den Advent willkommen heißen …. und ….
    dazu koche ich dieses, dein *aus dem Bauch* kreiertes Rezept auf vegan nach.
    Dazu Chinakohl mit fein geriebenen Karotten
    und Winterruccola….. das wird koestlich.

    Emmi ich habe gestern die fünfundzwanzigste Sorte Weihnachtsbäckerei produziert, die werde ich auch kredenzen und am Tisch der Adventkranz mit roten Kerzen …. da bin ich etwas altmodisch.
    Advent und Weihnacht ist bi uns, rot, grün Gold.

    1. Hallo Monika-Maria!! 😉 Ich finde es so schön, den Advent ganz traditionell zu zelebrieren. Bei uns in Italien gibt es diesen Brauch zwar nicht, dennoch habe ich ihn durch mein Leben in Deutschland in meinem Herzen geschlossen 😉 Ich mag auch die traditionellen Farben und ich freue mich schon, morgen ganz nach italienischer Tradition auch schon den Baum aufzustellen 😉 Und zu dekorieren! 😉 Ich finde es so schön, dass Du mein Rezept in vegan nachmachst! Ich wünsche Dir mit Deinen Lieben eine schöne Zeit und einen schönen 1. Advent!
