This is my kind of dough for my pizzas. It is the pizza dough Naples style which is a traditional recipe used in Napoli and now I bring it into your kitchens.
I have seen many recipes for a good pizza, but most do not believe that it really is just that simple.
It really requires very simple ingredients, no special flour, easy and uncomplicated.
The deciding factor for a really good pizza dough is the amount of yeast and the rest period. A good dough just needs time.
You might think now, but I have no time! And I say: Why? This dough can be prepared in the evening and allowed to go in the refrigerator until the next day in the evening, for example. Or you start the dough in the morning and leave it covered until evening, that works too. You don’t have to do more.
The long resting time is related to the use of the yeast. I use for this dough only 4 g yeast, nothing more. Why is it like that? It’s simple: if you use less yeast, the dough is looser, lighter and more digestible. And of course, it needs a longer fermentation time.
But it is really worth it, try it! I was quite surprised the first time I’ ve tried it!

Here is the recipe!
Pizza dough Naples style
- 450 g flour
- 2 tsp dried yeast or 8 g fresh yeast
- 300 ml of lukewarm water
- some oil
- 1 tsp salt
Put in a large and high bowl the flour, make in the middle of it a crater, add the yeast in it and a little water. With a fork dissolve the yeast in the water and take from the edges a little flour. Add more water and elaborate with the fork. Add salt. If it might be too dry, you can add a little water. Don’ t worry, the dough should stick! 😉 Now knead the dough with your hands for a few minutes. Allow some oil to flow to the edges of the bowl. Cover with a towel or plastic wrap and let it rest.
After the dough had enough rest time, flour the work surface lightly and lift the dough from the bowl. Divide into two equal pieces with your floured hands. Now press with your hands the dough flat and bring it into the form you need!
Preheat the oven at the highest level!
Use now toppings that you prefer!
Bake on the middle rack now for about 25 minutes!
