When I prepare my weekly plans, there is usually one time the week a stew. So I have listed on my shopping list for this week lentils for a hearty and delicious lentil stew.
This lentil stew is quite simple in its preparation.
You can cook a big pot so that there is enough to freeze for a further meal plan in the future!
Serve this hearty and delicious lentil stew with sausage and/or with a delicious homemade bread (My quick bread with onions, for example)!
I prefer to serve the sausage separately because our Junior doesn’ t like sausages so much.
I love this stew with noodles in it!
Here is the easy recipe!
- 500 g dried lentils
- 4 carrots, diced
- 5 potatoes, diced
- 2 shallots, diced
- 2 cloves garlic, diced
- 2 tablespoons olive oil
- 2 tsp granulated broth
- 250 g of tomato purée
- salt pepper
- In a large and big pot heat the oil and fry the shallot and garlic.
- Add the carrot and let them lightly fry, add lentils. Stir all well. Deglaze now with 2 L of water and simmer for about 45 minutes. I recommend here not to use salt, otherwise, the lentils won’t soften.
- When the lentils are tender, season with salt and the granulated broth. Add the tomatoes and potatoes, stir well and simmer for another 25 minutes.
