How about you, do you like lentils? I love lentils in each variation, not only in a stew!

I’ve thought to make something different with some lentils that I’ve had still in storage.

I thought back at our vegetarian time, and I thought of a red-lentils-one pan, which I’ve created then. But now I have these ordinary brown lentils. No problem, right? I soaked them in water for about 1 hour and cooked them 20 minutes so that they were still „al dente“ (without soaking these sort of lentils need about 30 – 40 minutes cooking time). In the fridge, I had smoked tofu, which we really like, and from time to time we have it in our house. What had I still there? Oh, courgettes and bell peppers! Perfect, so happened, that this dish came on to my meal plan! Tasty Mediterranean lentils stir fry.

This is quite easy to make, like so many things in my kitchen. Tofu is only an option in this dish, not a must. If you want, you can add bacon, or what is in your fridges, such as ham or salami, or sausages! Here you can run your imagination!

A quick, delicious vegetarian dish for the whole family! I’ve had it the next day cold and it tasted great, too! 😉

From the pan | Mediterranean lentils stir fry

Ingredients:

  • 150 g brown lentils
  • 1 courgettes diced
  • 2 bell peppers diced
  • 1 shallots diced
  • 2 cloves of garlic diced
  • 150 g smoked tofu diced
  • 1 tablespoon tomato paste
  • 3 tablespoons olive oil
  • salt, pepper
  • 1 teaspoon Italian herbs seasoning
  •  ½ glass White wine

Directions:

  1. Cook the lentils in plenty of water, without salt, al dente (about 30 minutes, without soaking in advance).
  2. Meanwhile, wash and cut the vegetables. Peel and chop the garlic and the shallot. Chop the smoked tofu.
  3. When the lentils are ready, remove from heat and drain.
  4. Now heat the oil in a pan, add the shallot and garlic and sauté briefly, add the vegetables and some salt and pepper. Stir well and add a little tomato paste.
  5. Now fold in the smoked tofu and deglaze with a 1/2 glass of white wine. Allow to evaporate, add the lentils. Again season with salt, pepper and herbs. Simmer for about 10 minutes, and stir.
  6. I’ve served this delicious lentils stir-fry with roasted potatoes.
