Fortunately, it is summer and it’s time for eggplants! I like them so much, that I would eat them more often. But unfortunately Junior doesn’ t like them at all. So I don’t make them very often.
I brought to you a simple and delicious dish! It is made of delicious grilled eggplants finally marinated!
They are so good, that you have no idea! You can serve them warm, but I suggest to serve them cold, there is such a delight! Especially when the weather is hot, put them in a sandwich! Delicious!
Here is the simple recipe!
Grilled marinated eggplants
- 2 large eggplants
- 3 cloves garlic
- 2 hot peppers
- Olive oil to taste
- Salt pepper
- Wash the eggplants and cut the ends. Cut in round slices, about 2 cm thick.
- Preheat a nonstick skillet, brush in a little olive oil. Now „grill“ the eggplant slices for about 5 minutes from each side. At the end add a little salt.
- In a separate bowl add the chopped garlic, chopped hot peppers and the chopped parsley. Add salt, pepper and 6 tablespoons olive oil and stir well.
- When the eggplants are done “grilled”, sprinkle the slices with the marinade.
You can serve them warm or cold! Both is very delicious!
