This recipe for this grilled marinated zucchini with mint is a traditional dish from Naples, my homeland!
Bella Napoli! Traditionally, the zucchinis are fried in oil and then marinated with balsamic vinegar and mint.
Of course, I made my version and prepared those in the oven to degrease the dish!
This is a beautiful and delicious, light and refreshing dish! Perfect as a side dish or as topping to delicious vegan burgers!
And here is the really simple recipe!
Grilled zucchinis marinated with mint
- 3 courgettes
- 2 cloves of garlic, in slices
- olive oil
- balsamic vinegar
- 10 fresh mint leaves
- Wash, dab and cut the ends of the courgettes. Cut into thin strips and place in a baking dish with baking paper.
- Grill them in the oven for about 10 – 15 minutes, (temperature: 200 °)
- In a bowl, you can now start to lay the zucchini. Start with the first layer zucchini, spread with a little salt and drizzle with olive oil and balsamic vinegar. Add some slices of garlic. Now overlay with the next zucchini layers and start over again, until no more zucchini are left.
