Hello, my dear friends! Happy New Year to all of you! I hope you’ve had a good start into this year!
To have a good start I have for you this delicious lentils one-pot, the Italian way!
This is a traditional Italian dish which is served on New Year’s Eve or New Year! Together with a so-called cotechino sausage.
And why lentils? Because in Italy lentils are traditionally associated with financial good fortune! If you eat on New Year’ s Eve many lentils, so they say, you have in the new year money! 😉
The cotechino sausage is a kind of pork sausage, which is passed on to the lentils! If you don’t have the opportunity to get a cotechino sausage, then you can also use a good sausage of your choice.
And if you don’t want sausages, go on, this one-pot is delicious for itself!! Just leave the sausage and eat this delicious lentils one-pot – the Italian way! Serve with a homemade spelt bread! Delicious!
Here is the recipe!
Lentils one-pot - the Italian way
- 250 g lentils (dried)
- 400 g pieced tomatoes
- 30 g bacon, diced
- 1 onion, diced
- 1 stick celery, diced
- 1 carrot, diced
- ½ glass of white wine
- 1 leaf of sage
- 3 tablespoons olive oil
- salt and pepper
- Put the lentils for half an hour in water, then cook them without salt for about 40 minutes.
- Then drain and leave them cooling down.
- Heat the olive oil in a pan and fry lightly the onion, celery and carrot with the bacon. Deglaze with the white wine. Add the lentils and add the pieced tomatoes. Now simmer with the sage leaf for another 20 minutes.
