I have for you this simple idea for dinner from my weekly menu plan #3! It’s a delicious onions frittata!
Did you ever try this combination of eggs and onions? 😉
You only need a few ingredients such as onions, eggs, a little oil, salt and pepper. Yes, that’s it!
Let the onions fry in a little oil, deglaze with a little water and let cook for about 10 minutes until they are tender.
In a separate bowl whisk the eggs with a little salt and pepper.
Add the whisked eggs to the onions in the pan.
Close the lid and let cook over moderate heat until the eggs get firm.
Yes, that’s it! I’ve served this onions frittata with a delicious cucumber salad and my roasted potatoes. I’ll write the recipe for it later! Promise!
And here is the simple recipe for the onions frittata!
2 onions, sliced
2 tbsp olive oil
- First peel the onions, halve them and cut into thin slices.
- Heat 2 tablespoons of olive oil in a pan, add the onions, simmer a little and fry for about 5 minutes. When these are slightly roasted, add 1 – 2 tbsp of water, stir well and allow to simmer for an additional 10 minutes until almost no liquid is left.
- In a bowl, whisk the 4 eggs and season with a little salt and pepper and put in the pan to the onions and spread well.
- Put a lid on the pan and let stock the eggs at low heat.
