Oh wow, it’s already Thursday, can you believe it?!! 😉 I have here a new recipe from my new menu plan #7!

A delicious potato bake with broccoli and feta!

Potato bake with broccoli and feta! This is a delicious and skinny potato casserole which you can serve for dinner! Ingredients: potatoes, skinny bechamel sauce, feta, broccoli, a little oil. Easy recipe for every day!

Such an easy dish and perfect for weeknight dinners!

I’ve cut the potatoes into slices and steamed them for about 10 minutes and put aside.

Then I’ve prepared a delicious bechamel sauce without milk and after that, I’ve sauteed the vegetables, in this case, broccoli and carrots.

And this delicious potato bake with broccoli and feta was ready for the oven. Baked at 220° C for about 20 minutes.

Potato bake with broccoli and feta

Ingredients:

  • 6 potatoes, sliced
  • 400 g of broccoli, frozen
  • 3 carrots, diced
  • 1 clove of garlic, diced
  • 1 tablespoon olive oil
  • 200 g of Feta
  • 50 g of butter
  • 50 g flour
  • 500 ml vegetable broth
  • 2 tbsp Parmesan, grated
  • 1 tablespoon Italian herbs, frozen
  • Salt pepper

Directions:

Cut the potatoes into slices and cook in a steamer for about 10 minutes.

Then remove from the damper and allow to cool.

In a saucepan, melt the butter, add the flour and whisk until creamy. Then add the vegetable broth gradually and stir until a slightly creamy consistency develops. Season with the herbs, the Parmesan and some salt and pepper.

In a pan, heat the olive oil, add the garlic with the carrots and roast a little, add the broccoli and stir well. Slightly simmer with the lid closed for about 10 minutes.

Then spread the baking dish slightly with the light bechamel sauce and spread some of the potato slices. Pour some bechamel sauce over the potatoes and add the vegetables. Crumble half of the feta on it and spread some bechamel sauce. Pour the remaining potato slices over the remaining sauce and remaining feta.

Bake in the oven at 220 ° for about 20 minutes.
