Do you know red lentils? Many of you know red lentils in stews or in form of an Indian Daal. Well, I’ve tried to make red lentils cutlets.
And what should I say: they are so amazingly delicious that they have a firm place on our meal plans!
You can make a big batch of them and freeze them so that you always have a quick dinner.
Or eat them cold in a sandwich the next day, it’s the perfect lunch snack!
But just have a look at this really simple recipe!
Here is the recipe!
Red lentil cutlets
- 250 g red lentils, dry
- 150 g of peas, frozen
- 2 carrots, grated
- 1 red onion, chopped
- 150 g of feta or other cheese
- 1 handful basil leaves, chopped
- 2 eggs
- 2 teaspoons corn starch
- 5 tablespoon breadcrumbs
- oil for frying
First, cook the peas and the red lentils together just lightly covered with water for 10 minutes. Then drain and cool.
In a large salad bowl grate the carrots and chop the onion. Folding the feta with your hand and giving it to it. Then add the chilled red lentils and peas, chop the basil leaves and add, season with salt and stir everything well.
Then add 2 eggs, starch and breadcrumbs and mix well again. If the mix is too moist, then add some breadcrumbs.
Now shape hand-sized, flat cutlets. Heat a little vegetable oil in a pan and fry the red-lentil cutlets on both sides for about 5 minutes until golden brown.
