When spring and summer come along I love to make a delicious salad. This time I’ve made a colourful mixed salad with feta!
A really refreshing delicious recipe with simple ingredients: iceberg salad, feta cheese, bell pepper, tomatoes, olives, Italian herbs, olive oil.
All combined in a big salad bowl, with crumbled feta. So delicious and perfect for a weeknight dinner, for a lunch at work or at the next BBQ! Junior loves this salad and maybe your kiddos will love it too!

Here is the recipe!
Colourful mixed salad with feta
- 1 iceberg salad, cut into strips
- 1 yellow pepper, diced
- 3 tomatoes, diced
- 3 tbsp green olives, pitted
- ½ cucumber, peeled and diced
- 200 g of feta, crumbled
- 1 tablespoon Italian herbs
- salt, pepper
- 2 tablespoons olive oil
Wash the lettuce, dry and cut into broad strips. Put in a large salad bowl.
Wash the peppers, core and dice them. Wash the tomatoes and dice them. Peel and dice the cucumber. Put everything in the salad bowl.
Add olives. Crumble the feta with your hands, add the herbs, salt, pepper and olive oil and mix well.
