I’m always in search for new inspirations which I can try in my kitchen! And there are so many recipes for salads. I love salads and this one caught my interest. I found it on the wonderful blog of Arno and he inspired me with this delicious idea!
Well, I’m talking about a delicious fried potato salad with green asparagus.
A simple and delicious side dish with only a few ingredients: potatoes, tomatoes, green asparagus, olive oil.
This is a perfect salad for BBQ’s.
If you don’t have green asparagus on hand, you can use green beans instead. Or any other vegetable you prefer!
I’ve had this delicious fried potato salad with green asparagus on my husbands birthday menu as a side dish to grilled steak! And it was perfect!

And it’s easy and quick to make 😉
Here is the recipe!
Fried potato salad with green asparagus
- 600 g of new potatoes with peel
- 200 g of green asparagus
- 4 tomatoes, diced
- 6 basil leaves
- salt, pepper
- 4 tbsp olive oil
Wash the new potatoes briefly, dry them and cut them into rough cubes.
Heat 3 tablespoons olive oil in a pan and fry the potatoes from all sides until golden brown.
Cut the green asparagus at the bottom and then cut into coarse pieces.
In a pan with hot lightly salted water simmer briefly (about 5 minutes). Then pour and cool with cold water and place in a salad bowl.
Wash the tomatoes and dice roughly and add to the asparagus.
When the potatoes are cooked, allow them to cool and add to the salad bowl.
Season with salt and pepper, add the basil leaves, add olive oil and mix well.
