We love legumes, what about you? I think legumes are very versatile and you can do so many things, not only salads, soups and stews!
I’ve made this time delicious white beans balls with feta, an easy and delicious meatless main dish for your family!
This recipe is for 12 pieces so you can make a bunch of balls because those white beans balls with feta are perfect to make ahead and to freeze them after cooking!
You have always on hand if you need a quick and healthy dinner!

Here is the recipe!
White beans balls with Feta
- 300 g of white beans, cooked or from the can
- 2 spring onions, cut
- 150 g of Feta
- 2 eggs
- 4 leaves of basil
- some breadcrumbs
- 4 tsp potato starch
- some olive oil
- salt and pepper
Add the drained white beans together with the spring onions, the feta, the eggs and the basil into a blender and blend coarsely.
Then place in a bowl, add 4 tsp potato starch and breadcrumbs and mix well. The composition should not be too moist. If necessary, add some breadcrumbs and mix well.
Then place in the refrigerator for about half an hour, so that the balls can be formed better.
Cover a baking sheet with baking paper and brush with some olive oil. Now shape balls lay t m on the baking tray and brush with some olive oil.
Cook in the oven at 220 ° C on the medium rail for a good 25 minutes (depending on oven).
