I have for you a delicious and wonderful recipe! Here I was inspired by the Italian cook Marco Bianchi, which is very known in Italy for his healthy way of cooking.
Here are delicious Farfalle with peas and feta pesto!
I’ve made this peas and feta pesto very often since I’ve tried it because it’s really so delicious! And you don’t believe it but Junior loves this pesto so much, yes loaded with all the veggies!! Fantastic!
This pea and feta pesto is very easy to make. You can serve it with pasta, as topping for bruschetta or as a dip! Fabulous, isn’t it?
Try it and make it for your kids, they’ll love it! Believe me!
And here is the easy recipe for you!
Farfalle with peas and feta pesto
- 500 g of farfalle or other pasta
- 300 g green peas, frozen
- 1 zucchini, diced
- 1 onion, diced
- 1 tablespoon olive oil
- 250 g Feta
- 1 handful basil leaves
- 2 tbsp olive oil
In a pot add the peas together with the diced zucchini, the diced onion and top up with a little water so that the vegetables are just covered. Add a little salt and add 1 tablespoon olive oil and simmer for about 10 minutes until the vegetables are cooked.
Do not completely drain the vegetables, keep some liquid, and then allow to cool.
At this time, cook the pasta in lightly salted water.
Then put the chilled vegetables into a blender, add the feta, the basil leaves, 2 tablespoons of olive oil and 2 tablespoons of the liquid and blend everything. After that place the pesto in a large bowl.
Drain the pasta and place in the bowl to the pesto and stir well.
