Here I am today with the same weather conditions as yesterday. It’s still damn cold outside!
So instead of refreshing things we still need some warming and comforting food! And here is my suggestion:

So you don’t need to stay too long in the kitchen! Great, isn’t it?

This dish I have made from scratch just checked my pantry and fridge and this is the result!
A really easy to make weeknight dinner with simple ingredients.
This quick creamy bell peppers and minced meat one pan requires only simple and frugal ingredients: minced meat, bell peppers, onions, green beans, sweet corn, red beans, cream cheese, olive oil, tomato paste, vegetable stock!

Quick creamy bell peppers and minced meat one pan
- 500 g minced meat or turkey minced meat
- 1 red pepper, diced
- 400 g of mixed vegetables Mexico frozen (green beans, onions, peppers, corn)
- 1 red onion, finely diced
- 2 garlic cloves, finely diced
- 4 tbsp fresh cream cheese with herbs
- 1 L vegetable stock
- 2 tbsp tomato paste
- 2 tbsp olive oil
- salt and pepper
- Heat the oil in a pan.
- Sauté the onion and garlic until glassy.
- Add the peppers and lightly sauté.
- Now add the minced meat and fry for a few minutes.
- Add the Mexican mixed vegetables and stir well and add the cream cheese. Stir until the cheese has melted.
- Add vegetable broth, season with tomato paste, salt and pepper and simmer for about 20 minutes.
- Serve with delicious bread!
