Here is a new easy recipe taken from my weekly menu plan no. 5/2018.

Do you love pasta in all variations? Well, I do!!

So I’ve prepared this simple and delicious pasta dish

Rigatoni casserole with ricotta and tomatoes! A perfect and easy dish for your weeknight dinner. Ingredients: rigatoni, ricotta, tomatoes, olive oil, parmesan cheese. Easy recipe!

 

I’ve combined here simple and delicious ingredients such as Rigatoni, bell peppers, peeled tomatoes, ricotta, Parmesan to a delicious and easy casserole!

 

Rigatoni casserole with ricotta and tomatoes! A perfect and easy dish for your weeknight dinner. Ingredients: rigatoni, ricotta, tomatoes, olive oil, parmesan cheese. Easy recipe!

 

Adding the ricotta to this casserole replaces the meat,  so you have a rich delicious vegetarian dish!

Here is the easy recipe!

 

Rigatoni casserole with ricotta and tomatoes

  • Servings: 4
  • Difficulty: easy

Ingredients:

  • 400 g of rigatoni or other pasta
  • 1 red onion, diced
  • 3 cloves of garlic, diced
  • 1 bell pepper, gutted and diced
  • 1 small tin of peeled tomatoes
  • 200 g of ricotta
  • 100 g of grated Parmesan
  • 2 tbsp olive oil
  • Salt pepper

Directions:

  1. First, cook the rigatoni al dente with plenty of water following the instructions.
  2. Meanwhile, you can prepare the sauce. Heat the oil in a saucepan and lightly fry the onion, garlic and bell pepper.
  3. Mince the peeled tomatoes with a fork and add to the pot. Mix well. Season with salt and pepper.
  4. Simmer for 5 minutes with the lid closed.
  5. Then stir in the sauce the ricotta, boil briefly and remove from heat.
  6. Drain the pasta and place in an ovenproof dish. Add the sauce and mix well.
  7. Sprinkle with grated Parmesan.
  8. Bake in the oven at about 200 ° C for 15 minutes.
