Hier habe ich eine leckere Gemüse Lasagne für Euch! Das Wetter lässt es im Sommer auch zu, mal Lasagne auf den Tisch zu bringen. Wenigstens sind Sommergemüse in der Lasagne! 😉

Although now is summer, you do not think necessarily of Lasagne. Nevertheless, I have made on a rainy Sunday a light garden lasagne with vegetables. Across the summer garden, so to speak.

Garden lasagne with delicious summer vegetables like zucchinis, eggplants, bell peppers, tomatoes. Your family will love it! Easy recipe!

Sometimes I use store-bought Lasagna plates. This time, I’ve bought the Barilla „Emiliane“. These are not made from durum wheat, but there are egg noodles (ie not suitable for vegan cuisine) and taste better. Barilla has in the preparation of pasta different editions and the pasta Emiliana is one of them. This I can really recommend you for the Lasagna if you don’t like to make the pasta dough for the Lasagna at home. The Lasagna plates must not be pre-cooked., but can be processed directly and are really very good quality.

(By the way: The whole Pasta Barilla, which is made from durum wheat is also vegan)!

The weather is getting warmer, even here in Northern Germany. So it’s time to make some more quick and light salads! Like this very simple but delicious pasta salad Caprese style!

It combines all the flavours of a mozzarella caprese with pasta! Perfect isn’t it?

You only really need a few ingredients such as pasta, mozzarella, tomatoes, basil leaves, olive oil. That’s it!

This recipe for this grilled marinated zucchini with mint is a traditional dish from Naples, my homeland!

Bella Napoli! Traditionally, the zucchinis are fried in oil and then marinated with balsamic vinegar and mint.

Of course, I made my version and prepared those in the oven to degrease the dish!

This is a beautiful and delicious, light and refreshing dish! Perfect as a side dish or as topping to delicious vegan burgers!

Ich freue mich immer, wenn meine Rezepte ausprobiert werden. So wurde mein Pizza-Teig schon öfters ausprobiert. Dieses Mal aber hat die liebe Stephanie eine glutenfreie Version der Pizza gemacht! 😉 Einfach toll, wie ich finde!

Ich habe Pizza gebacken 🙂 Nein, es war nicht mein erstes Mal und nein, es war auch nicht mein erster glutenfreier Pizzaversuch.

Aber!! ES WAR MEINE ERSTE GLUTENFREIE PIZZA, DIE SCHMECKT!!!!

Es ist ja schon eine Sache, eine glutenfreien Hefeteig hinzubekommen, aber ein glutenfreier Pizza-Hefeteig ist eine wahre Kunst.

An dieser Stelle möchte ich Emmi von Emmi’s Cookinside.blog von ganzem Herzen  danken. Denn ich habe von ihr viele Pizzateig-Tricks gelernt, die ich gar nicht kannte.

  1. 💡 Das Öl nicht einfach in den Teig verkneten, sondern am Rand der Schüssel entlang laufen lassen. Wer kommt auf diese geniale Idee?
  2.  💡 Laaaaaange Ruhezeit für den Teig. Ich habe ihn schlafen lassen, ja wirklich, eine ganze Nacht lang und er durfte sogar ausschlafen.
  3. 💡 Richtig heiß backen!!
  4. 💡 Betrifft die glutenfreie Variante: Flohsamenschalen-Schleim. Hört sich furchtbar an, aber das gibt dem Teig eine elastische Konsistenz (und sorgt nebenbei auch dafür, dass der…

Finally, it’s time for eggplants! I am very happy about that because I love eggplants. My son thinks otherwise because he doesn’t like this sort of vegetable. However, I make them at least for me and my husband.

Today I have for you a traditional dish of Naples! A delicious eggplants parmigiana Naples style!

Eggplants parmigiana Napoli! Such a delicious traditional dish from Naples! If you love eggplants, delicious tomato sauce, mozzarella and basil then this casserole is absolutely for you! Really easy recipe!

This casserole has a tradition in my family because my Nonna (grandmother) has always made it and my mum still makes this dish with eggplants from her garden! I don’t tell you how good they are!
