Well, this is one of my recipes, which I make with vegetables that Junior doesn’t love that much. Like zucchini or courgettes! Is it possible?
He loves cucumbers and watermelons, but he doesn’t eat zucchini!!
So this is the moment where I begin to “fight”, oh yes, I do! I wanted to find a way to make zucchini delicious for him because zucchinis are delicious, isn’t it? 😉
Here in Germany, there is a dish called “Kartoffelpuffer”, I think in English is it something like Hashbrowns. I thought to swap the potatoes and use zucchini instead and created those delicious Zucchini-Fritters!
And………STRIKE! He loves those little crunchy zucchinis-fritters. And I bet your kids would love them too!
They’re really easy to make and you can make them ahead, freeze them and just warm up in the oven. So you always have a quick dinner on hand served with a delicious salad and a delicious dip!
And here is the recipe for you!
- 2 large courgettes, roughly grated
- 2 eggs
- 1 onion, diced
- 1 handful basil leaves
- 2 tbsp potato starch
- 3 tbsp Parmesan, grated
- salt, pepper
- some oil
Wash the courgettes, grind the ends and grate with a grater. Also, grate the onion.
Put in a bowl and gradually add the two eggs, 2 tbsp of potato starch, 3 tbsp of parmesan, a handful of basil leaves, salt and pepper, and stir thoroughly until a mass is formed.
Heat a little oil in a skillet and add with a spoon from the mass into the pan and flatten with the spoon to form a fritter.
Now fry these fritters for about 5 minutes from each side.
