Did I ever mention before that I love legumes, especially chickpeas? Well, now you know it and I always try to create different things with chickpeas.
This time I’ve made a kid-friendly finger food – delicious chickpea nuggets – loaded with veggies!
Yes, nuggets without meat, it’s possible and it’s really delicious! Believe me!
With this recipe, you can make a batch of those crispy chickpea nuggets, fry them and you can freeze them!
A perfect make ahead meal for your family!
It’s really simple and it doesn’t cost you time nor a lot of money 😉
You have the choice how to make those chickpea nuggets – they are fabulously made in the oven together with oven baked fries! This would be the very skinny version of this dish!
And here is the recipe for you!
- 350 g chickpeas, boiled or 1 large can be drained
- 1 packet butter vegetable mix, frozen (peas, cauliflower, corn)
- 2 eggs
- 100 g Parmesan, grated
- 2 toast, crumbled
- 2 tablespoons Italian herbs, TK
- 1 – 2 tablespoon breadcrumbs
- salt and pepper
- oil for frying
Blend the pre-cooked chickpeas with a kitchen machine and place them in a large bowl.
Blend the butter vegetables also roughly and give to the chickpeas.
Add two eggs, grated Parmesan, the crumbled toasts, the herbs, salt and pepper and mix well. It should not be too moist. If this is the case, add some breadcrumbs.
Leave it to rest in the refrigerator for about 10 minutes. Then remove it and form nuggets from it. Roll some bread into breadcrumbs.
In a pan, add some oil and heat. Now fry the chickpea nuggets from each side until golden brown.
